The Clinical Educator and Placement Student Program Redesign was completed in partnership with Southern Queensland Rural Health and the University of Queensland. The project involved restructuring the course and developing new learning materials to improve engagement and learning outcomes. Interactive workbooks and updated workshop activities were created to replace slide-based materials, transforming the resources into active learning tools while still providing a useful reference for participants.

The Rapid Participatory Design Workshop was a pilot project exploring how design thinking and participatory methods can support climate change adaptation planning. Conducted at Palm Beach on the Gold Coast, the workshop engaged members of the public in interactive mapping activities to visualise possible futures for the local coastline. The project examined public responses to collaborative planning approaches and provided insights to inform future climate adaptation initiatives.

The Food as Medicine online course explores how nutrition can support health, prevent disease, and assist in the management of chronic conditions. This three-week course introduces the science behind food and health, covering topics such as macronutrients, antioxidants, gut and brain health, genetics, and the role of nutrition across the lifespan. Participants also examine the complexities of nutrition science, nutrition misinformation, and the future potential of food as medicine, while developing practical strategies such as mindful eating and evidence-based food choices.
